We purchase fresh, lively "young Satsuma eels" from Osumi and prepare them in our restaurant.
Crispy on the outside, soft and fluffy on the inside
After filleting the eel, it is grilled once, then slowly steamed and grilled again to finish.
This unaju is an excellent match with Satsuma Kurodori yakitori.
